This is the home of our new website. We opened in 2007 and have been going strong ever since. I hope to use this site to post our menu's, create a blog, and generally aquatint you with our little restaurant.
Patrick and Barb Hotaling
That's me on the right, the owner and operator of Paya'. My Name is Barbara Hotaling, and I moved from the Seattle area to Dubois in 1997. My first few years here, I split my cooking career between south east Alaska, and Wyoming. I was working summers aboard a small cruise boat, and winters at Togwotee Mountain Lodge. The dual existence was getting old, especially after being trapped in Alaska for several days after 9/11. I came home to Dubois to stay. The opportunity to work at the newly renovated Sawmill lodge opened up, and my partner/husband and I, took on the challenge. We did that till 2006. Tired of working for other people we rolled the dice and opened Paya'. We wanted a balance of quality hand crafted food, with a casual friendly atmosphere. Paya' evolved slightly different than our original idea, but I think it was a positive evolution. As with many couples, Patrick and I had our differences of opinion over the years. In April of 2012, he took the opportunity to start his own operation, "Mom's" in the small cabin located behind Paya'. I took over the running of Paya' completely. The experience has challenged me in ways I never imagined, and if I had, I don't think I would have done it. Yet I have no regrets, the lesson's learned are with out a doubt some of the richest in my life. _
